  • 1½ cups icing sugar, sifted

  • ½ cup fine rice-flour, sifted (this makes a gluten free version – substitute for plain flour if gluten free not required)
  • 1 cup ground almonds 

  • 6 (180 ml) egg whites, lightly beaten

1 tsp vanilla essence 

  • 150 g butter, melted

alternatives: 1 cup fresh berries, such as blackberries, raspberries or sliced strawberries
  1. heat oven to 180ºC fan bake
  2. grease 12 oval-shaped friand pans
  3. place icing sugar, rice flour (or plain) and ground almonds in a bowl
  4. make a well in the centre and pour in egg whites, vanilla and butter, then stir briefly to just combine
  5. divide mixture between prepared pans to two-thirds full. Top each friand with a sprinkling of berries if using
  6. bake for 25 minutes until golden brown
  7. remove from oven and leave to stand in pans for 5 minutes before turning out onto a cooling rack.
