  • 35ml Cuban rum
  • 6-8 mint leaves
  • 2 lime wedges
  • 1 tsp sugar
  • 35ml Kapiti Kitchen Elderflower Syrup
  • 250ml sparkling water (try Daylesford & Hepburn!)

Squeeze limes into highball glass and add mint leaves and sugar. Churn, add rum and fill with crushed ice. Churn again, add more crushed ice and top with Elderflower Syrup and sparkling water. Garnish with a sprig of mint and have a great weekend!
